Wish I could give this 10 stars! I've made this 3 times in the past 6 weeks, the first time for the 4th of July celebration. It was wiped-out in minutes!
Then a friend gave us new potatoes from their garden and oh, my Goodness! Heaven in a bowl when I used them for this salad! I use some crumbled bacon, because I didn't have the chicken or ham. You can't go wrong putting bacon in anything, right?
This salad is perfect, as written...don't change anything!

Excellent recipe! Took this to a family reunion today and the whole 9x13 was gone when I left! Quite tasty! I think the next time I make this, I will saute the white onion in butter first to soften it up a bit and make the onion flavor a bit more mild and sweet. I also used bacon bits, which worked really well and a 2 pound bag of frozen homestyle hashbrowns that had been thawed.

This was sooooo GOOD! I had to make a few changes just because of the ingredients I had on hand but it was wonderful...just the same. I used about 8 cups of cubed leftover red potatoes and instead of ham I chopped up a pack of bacon a cooked it along with my onions. When the bacon was done I added this to my mixture bacon grease and all! I decreased my butter accordingly, about 2 tablespoons. This is such a great comfort dish. I could eat it as a main dish all by itself! Thanks again!!

This is a fantastic recipe which I'll be making over & over again!(already have!!) I preferred to serve it hot as part of a meal, and made sure that the potato cubes were not too big.I also omitted the bacon ( veggie in the family.) I don't feel we missed out on the delicious flavour by not including bacon. Thank you Kittencal.

this is a fantastic recipe. but, no need to peel potatoes. just wash them really well, and cube and cook. there are so many minerals in the potato peel itself, and there's really no need to throw them away unless the peel is tough or old.

Wow, this is YUMMY! Like a previous reviewer, I used small red potatoes, and bacon. I made it ahead to take on a weekend picnic, and it was just perfect. Can't wait to also try it baked. Delicious.

Very good! We had it cold and will be trying it again baked. I knew i would be serving to vegitarians, soi omitted the meat. I'll try adding bacon next time and I think a few more green onions. Thanks for posting.

This was the first thing I ever cooked (besides grilled cheese and kraft dinner haha) and it turned out really well! I undercooked the potatoes a bit but thats my fault :) The taste was awesome, the cheddar cheese and green onions really went nicely with the potatoes. Thanks for a great recipe even a true beginner can do!

I made this as a hot dish and boy is it filling and oh-so-good and easy. It took nothing to put together and I even did it with using the real potatoes. I can see using frozen hashbrowns would make this quicker, but I wanted to use the real deal. DH doesn't like potato salad, but he did like this. Great recipe! I too used 2 lbs of frozen (then thawed) hash browns (cubed not sliced). I would recommend using just the green onions or just the white onion, but not both. I made this for our kinship group Sunday night and then again for potluck for Community Bible Study. Great hit!

Fabulous!! Just made it for the third time and realized that I have never rated it. Served it hot. So easy to throw together. The hardest part is boiling the potatoes HA. This is a great "make the night before" dish. Also just as yummy if you leave out the bacon/ham due to $ issues or non-meat eaters. Bet it is totally delish served cold, too (though I do not like cold potato salad- go figure). Thanks, Kittencal for such a winner! Yum, yum, yum.

This is a fabulous recipe. I made this tonight for supper and DH and I loved it. I made the baked casserole. The green onions are so good in this. I only made a half batch since there were only three of us, but I can't wait to make for the rest of the family. Thank you so much for yet another awesome recipe.

I finally made this after wanting to for quite some time. It is delicious! I tried it cold after I put it together and then again after I got out of the oven. Delicoious both ways. I used bacon instead of ham.

I didn't add in the ham, but had it with ham instead for Easter! What a great thing to have with the ham! It was really tasty and enjoyed by myself and my family and guests! Thank you for sharing!

We made this as a cold potato salad. It wasn't a bad salad but I would deffinately add the optional ham. Unfortunately we have vegetarians in our family so that wasn't an option. We ended up sprinkling bacos on top of individual servings (if you mix it in they get a weird texture/flavor as they soften) I agree that Hellman's is a must. Thanks for the change from our classic potato salad recipe.
