I need more stars for this, pls! This sandwich is mis-named---:) --it's a gourmet delight!!! With NO Trader Joe's in my area, I used Recipe#111801 for the roasted eggplant/pepper spread. Pulsed in the CuisinArt. Made this twice--once as a cold sandwich and once as a baked-melty one. YUMMO, both ways. Made for Elves Appreication Cook-a-Thon in Cooking Photos.

Ingredients Nutrition

  • 1 baguette
  • 226.79 g package salami
  • 226.79 g herbed goat cheese
  • 283.49 g jar roasted red pepper and eggplant spread
  • 340.19 g provolone cheese
  • 283.49 g jar roasted red and yellow peppers


  1. Slice baguette lengthwise.
  2. Spread red pepper tapenade on one half.
  3. Spread goat cheese on other.
  4. Layer salami, cheese, roasted red peppers on top.
  5. Put whole thing together.
  6. Wrap in plastic wrap.
  7. Refrigerate overnight.
  8. Bring to room temp and slice into 1 inch pieces.
  9. Add anything else you like -- turkey, other cheese, arugula, but that would wilt overnight, etc.
  10. And you don't HAVE to refrigerate overnight, but I like the way the flavors meld.
