  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 3 tablespoons margarine
  • 1 (14 1/2 ounce) can diced tomatoes tomatoes
  • 1 (10 ounce) can Rotel Tomatoes
  • 1 (10 3/4 ounce) can condensed cream of mushroom soup
  • 1 (10 3/4 ounce) can condensed cream of chicken soup
  • 13 cup picante sauce
  • 1 tablespoon chili powder
  • 12 corn tortillas, torn into 1 inch strips
  • 3 (13 ounce) cans chicken
  • 34 cup shredded cheddar cheese

directions

  • Cook onion and green pepper in margarine until tender.
  • Remove from heat.
  • Add tomatoes, soups, picante, and chili powder, mix well.
  • Line bottom of shallow 3 quart casserole pan with 1/2 of tortillas strips.
  • Top with 1/2 the chicken and 1/2 the vegetable mixture.
  • Repeat layers.
  • Sprinkle with cheese.
  • Bake uncovered @ 350F for 35 minutes.
