- 2 lbs jumbo shrimp or 2 lbs colossal shrimp, shelled and deveined
- 1 cup flour
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 eggs, beaten for 10 seconds
- 16 fluid ounces extra virgin olive oil
- 1 lemon, cut into 8 wedges
- Mix together the flour, salt and pepper.
- Rinse the shrimp under cold water and dredge them in the flour mixture.
- Dip them in the egg and then fry them in batches in hot oil (about 8 minutes).
- Serve with lemon wedges.
