Kinda Amish Macaroni Salad

ingredients
- 2 cups mayonnaise
- 1⁄4 cup distilled white vinegar
- 1⁄2 cup sugar
- 2 tablespoons prepared yellow mustard (no other kind will taste right!)
- 1 lb elbow macaroni
- 1⁄2 cup celery, chopped fine
- 1⁄2 cup carrot, chopped fine
- 1⁄4 cup onion, chopped fine
- 8 -10 hardboiled egg, diced (big chunks are okay by me, but chop them small if you like)
- paprika or parsley (optional)
directions
- Combine mayonnaise, vinegar, sugar and mustard; Chill in refrigerator until needed.
- Cook macaroni as directed on package, just until tender; drain and cool.
- Combine macaroni with celery, carrots, onions and eggs.
- Pour mayonnaise mixture over all and stir to mix well.
- Refrigerate overnight in tightly sealed container.
- It may seem a bit wet at first, but after it chills overnight, it's just right.
- There's no salt in this recipe-- if you must, add 1/2 teaspoon to the mayonnaise mixture.
- We're not sodium restricted and we like it just fine without.

I was looking up Amish Macaroni Salad since that was my assignment for today\'s picnic......and right here you were sis! You\'re always there to help me out! I left out the carrot and only used 5 eggs since that is all I had. The taste is great for a Weber family picnic. Not fancy, just plain yummy! My husband added salt to his.........

I live in the heart of Amish country, where this salad is very popular and sold at every grocery store. This recipe tastes EXACTLY like the Amish Salad sold in the deli. This recipe is perfect. Considering that they sell the salad for about $4 for a 16 oz container, this recipe is a bargain way to get the same effect.

Thank you! Thank you! I have always tried to recreate the creamy pasta salads that the deli sells and I have always been unsuccessful...until now! This salad is fabulous and I will be making it often this summer. I made this for our first family BBQ of the season and I served this with Cola Burgers recipe#27788 The only change that I made was to use shell shaped pasta instead of macaroni. Thanks for posting:)
