- 1 3⁄4 cups whole wheat flour
- 1⁄2 cup sugar
- 1 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1 cup fat-free buttermilk
- 1⁄3 cup vegetable oil
- 2 teaspoons vanilla
- 1 teaspoon cinnamon
- 1⁄2 teaspoon allspice
- 1⁄4 teaspoon ginger
- 1⁄4 teaspoon nutmeg
directions
- Preheat the oven to 350 degrees and grease an 8x8 inch baking pan.
- Stir all the ingredients together.
- Pour the mixture into the 8x8 baking pan.
- Bake for 35-40 minutes or until toothpick comes out clean.

I had some full fat buttermilk to use up and went looking for recipes. My husband and I thought this was ok, sort of bland, but having good texture and a reasonable sweetness. The kids loved it and have requested it in their lunchboxes this week. The only issue i had was that the batter is super thick and I wondered if I had done something wrong. Nope, it worked out just fine. Thanks.
