I created this recipe when I had leftover buttermilk I didn't want to waste. This is a pretty tasty treat and relatively healthy too! Vegetarian and vegan friendly recipe as well.

I had some full fat buttermilk to use up and went looking for recipes. My husband and I thought this was ok, sort of bland, but having good texture and a reasonable sweetness. The kids loved it and have requested it in their lunchboxes this week. The only issue i had was that the batter is super thick and I wondered if I had done something wrong. Nope, it worked out just fine. Thanks.

  1. Preheat the oven to 350 degrees and grease an 8x8 inch baking pan.
  2. Stir all the ingredients together.
  3. Pour the mixture into the 8x8 baking pan.
  4. Bake for 35-40 minutes or until toothpick comes out clean.
