  1. Beat egg yolk.
  2. Add 4 tablespoons of the sugar and the Marsala wine and beat until thick and creamy.
  3. In a separate bowl, beat egg whites and all remaining sugar until thick peaks form.
  4. Fold in half the mascarpone into the yolk mixture.
  5. Fold in the other half of the mascarpone into the egg whites.
  6. In a deep pan, start the layering by dipping the savioiardi into to the espresso and lining the entire bottom of it with the cookies.
  7. Top with egg yolk mixture.
  8. Sprinkle with cocoa powder.
  9. Do another layer of savioiardi.
  10. Then do a layer of egg white.
  11. Sprinkle with cocoa powder.
  12. Keep layering alternately like that.
  13. When finished, top with shaved or grated chocolate.
