Kielbasa, onions, sliced potatoes, red bell pepper and garlic, all sautéed till crispy. So good! I served it like a hash, with eggs on the side. Very easy, and done all in one large pan. Thanks to ThatBobbieGirl for inspiring me. She had mentioned doing something like this, and this is the version I came up with. Feel free to add whatever spices or heat you may like. Makes a great dinner or breakfast.
We did this with a simple salad for a quick and easy weeknight supper. The leftovers the next day were even better, imo. Thanks for pointing this one out to me.

This is one of my mom's dishes!! (without the McCormick's) She made this for dinner for my family when she came to help after the birth of DD#2....so for me, this is TRUELY comfort food.
