A great easy quick recipe for weeknight meals that the kids really enjoy. I also like to make this with homemade Mexican sauce or watery salsa.
- 1⁄4 cup onion, minced
- 9 -10 ounces cooked chicken breasts
- 1 cup chicken broth
- 14 ounces stewed tomatoes
- 1 1⁄2 cups quick-cooking rice
- parmesan cheese
- Heat a large skiller coated with cooking spray over medium heat. Cook onion for 2-3 minute or until softened. Add chicken breast strips; stir and cook 2 minutes or until chicken is hot. Stir in broth and tomatoes; bring to a boil. Stir in rice; reduce heat to low. Cover and simmer 5 minutes. Remove from heat; let stand 3 minutes, covered. Sprinkle with cheese and serve.
