ingredients
- 1 (16 ounce) can kidney beans, rinsed and drained
- 2 hard-cooked eggs, chopped
- 1⁄2 cup sliced celery
- 1 small onion, chopped
- 1⁄4 cup mayonnaise
- 1⁄4 cup dill pickle relish
- 1⁄2 teaspoon pepper
- 1⁄4 teaspoon salt
- lettuce leaf (optional)
directions
- in a bowl combine all of the ingredients.
- stir until coated.
- refrigerate until ready to serve.
- serve in a lettuce-lined bowl, if desired.

I love this twist on egg salad. I like the way that the beans make it a bit heartier. The only change I made was to leave out the chopped onion, as I'm not a big fan of raw onions. I also love the reasonably sized portions. It would easily feed four in my family, but it certainly won't be left sitting around! Thanks for a great recipe!
