These spicy little guys were a nice change of pace from the usual glazed carrots. I halved the recipe and it worked out fine. I used only 1/4 cup of water, but I might use a little less next time. By the time the glaze cooked down, my carrots were a little softer than I like them. But I might like them with a little more crunch than most.

Had intended to cut back on the cayenne a little bit, then didn't, & we really enjoyed these GREAT TASTING CARROTS! Will definitely be making these again & again! Thanks much for the recipe! [Tagged, made & reviewed in Healthy Choices ABC]

Can't go wrong with one of your recipes! These were good! Especially for someone that does not like cooked carrots. I did cut these different made carrot pennies instead of sticks. But that did not change the flavor. I will fix these again and might add some lemon zest next time. Thank you Carol! Shirl

Delicious way to serve us carrots! Used baby carrots and a lot of lemon juice. Never thought of serving carrots with cinnamon - and we loved it! Thanks Kit!

I think I found a new favorite Carrot recipe. These carrots are awesome. My husband and I had them tonight and we loved them. Great flavor. The cinnamon and cayenne make this one a big hit. I also added 1 Tbsf ground flaxmeal at the end to serve, just cause its healthy for you. Otherwise followed the recipe exactly and it was perfect and extremely easy to make. Thanks for this awesome recipe.

Lovely flavor - I used lime juice instead of lemon (had them on hand) I let them simmer for apprx 8 minutes - they still had a bit of crunch left - just right Thanks for a carrot recipe that I will use again
