Very simple rice pudding with a sweet and lightly spiced taste. For a heavier pudding add more rice. For a sweeter pudding add up to 1/2 C of sugar.
- 1 quart whole milk
- 1⁄2 cup uncooked white rice
- 1⁄4 cup sugar
- 1⁄4 teaspoon cardamom
- pistachios or raisins or almonds
- In a medium saucepan combine all ingredients and bring to a boil. Lower heat to medium and cook, stirring constantly until desired consistency. Can be served warm or cold. Will thicken slightly when cooled.
