A couple wanted me to make Key Lime for their wedding cake. Believe me... this was THE best recipe! Moist, delicious, not too sweet but not too tart. We found it better with a plain white frosting.
Found this recipe, potluck at work and key limes were 20 for $1.00, so a perfect time to give it a try. I didn't alter a thing and would recommend you don't substitute regular lime for key limes there is a difference. You made me a hit at work, thank you PaulaG.
This cake is wonderful. I have an addition that made mine even better. Bake it as a 2 layer cake and after you've made the frosting add graham cracker crums to a third of it and use it for the filling between the two layers. It gives it more of a key lime pie flavor because of the graham cracker crust. Thank you sooooo much to Shari Jones. This is my whole family's new favorite dessert!
This cake was a great finish to our neighborhood St Patrick's Day dinner. I was surprised that it was so thin, but it was still a hit with lots of seconds. I used actual key limes. I also used a butter cake mix since I had it on hand.
Very good cake. We did it as cupcakes for my husbands work. I sent it with the frosting on it. But it was really yummy with out the frosting as well. We couldn't find any key lime juice. But found this "Rose's Sweetend Lime Juice" in the liquor aisle at walmart. Someone else said that it was a little too tart. But I didn't think it was tart in a bad way. It was kind of a sweet tange, and it was a very nice surprise!!! LOVE IT
After reviewing a number of key lime cake recipes, I decided to make this one for Easter. It was delicious! I disagree with previous comments about its tartness and artificial flavor. It's certainly not as tart as key lime pie and if you use key lime juice (fresh or from a bottle) it has an excellent flavor. I used two 9" cake pans and each layer was only about 1" (someone else on this web site mentioned the cake doesn't rise much and I agree). Next time I might consider making three (or even four) layers. The cake is moist and delicious. The frosting is creamy and rich. It's a nice bright green cake for St Patrick's Day, Easter, or a summer get together!
This a very pretty and festive looking dessert and the texture was wonderful. We found it a bit too tart and in a sort of artificial way...I think because of the gelatin. I would either leave out the lime jello (and probably use food coloring to try and get the same pretty color) or use a yellow or white cake mix instead of lemon. Thanks for sharing. Made for ZWT3.
Great cake!!! I used whole milk instead of water and added a cup of sour cream to the batter to give it more of a "made from scratch" taste and it worked. I didn't have any fresh limes on hand so I used key lime juice from a bottle and pure lime oil. The cake sank a little as it cooled but it was still very moist. The lime flavored cream cheese frosting was the perfect topping. Will definitely make this one again.
I made this for a potluck at work and everyone loved it; nice and moist and Spring-like! Easy to make, too. It's a keeper; thanks for a wonderful recipe!
