  • Place 1/2 of the spices and seasonings in a large slow cooker.
  • Preheat in Microwave 2 minutes.
  • Cut beef chuck roast into 8 large chunks.
  • Place beef in slowcooker.
  • Add the other half of the seasonings and spices to slow cooker and stir.
  • Heat in microwave in 2 minute intervals until starting to boil, about 5 minutes total.
  • Transfer to the slow cooker with lid tightly sealed. do not open lid.
  • Cook on high 3 hours, stir and replace lid.
  • Add butter in 1 tablespoon chunks and stir.
  • Cook on low for 2-3 hours with lid ajar to reduce salsa to a gravy like consistency.
  • Once tender gently shred with 2 forks and turn crockpot to warm.
  • For a burrito or quesadilla, serve with low carb tortillas (we use mission lo-carb), top with cheese, guacamole and tomatoes. We also top with a bean and corn relish, yum!
