From the historic Keeler Tavern in Ridgefield, CT
- 1 gallon cider
- 7 cinnamon sticks, broken into pieces
- 2 teaspoons whole cloves
- 2 teaspoons whole allspice
- Pour gallon of cider in a very large pot. Put spices in a cheesecloth and add to cider. Bring to a boil.
- Simmer uncovered for about 30 minutes.
- Let stand for 15 minutes with heat off. Remove spice bag.
- Chill until needed, then reheat.
- Serve warm.
