  1. Combine the garlic, chilli, mint, lemon rind, oil and lemon juice in a medium bowl.
  2. Add prawns and stir to coat. Place in fridge to marinade for 10 minutes.
  3. Thread prawns onto skewers. Season. Heat grill to high.
  4. Spray skewers with oil.
  5. Cook for 2-3 minutes each side or until golden brown.
  6. Top with mint. Serve with mayonnaise and lemon wedges.

Great combination of flavors. Loved the touch of mint. It was iffy weather-wise today so I did these on a stovetop grill pan and that worked great. Will be making these again!
