Kato's Triple Fruit Pound Cake

Your favourite summer fruits or berries baked in a light and tasty pound cake. What could be easier.

  1. Cake Combine peach and pear pieces with cherries and set aside.
  2. Blend butter and sugar until light and fluffy.
  3. Add flour and baking powder together.
  4. Add milk to creamed butter and sugar mixture.
  5. Add half of the flour to the milk and butter mixture and blend well.
  6. Beat in 4 eggs, one at a time.
  7. Add remaining flour mixture and blend well.
  8. Add lemon extract, rind and fruit.
  9. Pour into greased 9-inch springform pan.
  10. Bake in 350F oven for 70 minutes.
  11. Cool on rack in pan for 15 minutes.
  12. Serve warm with Sour cream topping.
  13. Sour Cream Topping: Combine sour cream, sugar and vanilla.
  14. Finely chopped pieces of fresh fruit (cherries, peaches or pears) may be added to topping if desired.

Decided to make this even thos stores don't yet have all the fresh fruits, & yet I found exactly what I needed at a local farmers' market! This cake was VERY EASY to put together, & everything came out great! I especially liked the idea of chopping additional fresh fruit to include in the topping! A real keeper, & thanks for posting!

I made this this morning using what I had on hand, canned peaches and pears and cut Mandarin oranges for the cherries. I used candied lemon peel for the ginger. It all came together beautifully and the house awoke to the aroma of fresh coffee and warm cake. The guests were mad about it (I'm sending the rest of it home with them in the morning!). Very simple and direct to make and it's gorgeous with it's topping and the fruits showing.
