  • Preheat oven to 325 degrees. Lightly grease two 8 1/2 x 4 1/2 loaf pans.
  • Combine flour, salt, baking powder, baking soda, and spices in a bowl. Set aside.
  • In a large bowl, beat butter and sugar at medium speed until just blended.
  • Add eggs one at a time, until light and fluffy.
  • At low speed, beat in flour mixture until combined.
  • Beat in pumpkin. Add oats and applesauce.
  • Divide batter evenly into prepared pans and bake for about 1 hour, or until a knife inserted into center comes out clean.
  • Let loaves cool in pans for 20 minutes, then turn out on a wire rack.
  • Eat them or freeze them for later. Yum!
