      Heat oven to 350°F Lightly spray bottom only of 9 x 5-inch loaf pan with cooking spray.

      In medium bowl, combine oats and milk; mix well. Let stand 10 minutes. Stir in bananas, egg substitute and oil until blended.

      In large bowl, combine flour, sugar or sweetener, baking powder, cinnamon, baking soda, salt and nutmeg; mix well. Add oat mixture to dry ingredients all at once; stir just until dry ingredients are moistened. (Do not overmix.) Pour batter into pan.

      Bake 55 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan. Cool completely. Store tightly wrapped.

      Very tasty and nutritious! I used 1/4 cup olive oil, and 1/4 cup applesauce. I also added 1/2 cup dark brown sugar instead of the 1/4 white sugar. I used the thicker cut oats, which just made it better I think! I also added about 1 tablespoon of lemon juice, as I always have with my other banana bread recipes. Thanks for sharing! I'll be making this one again.

      This bread came out moist and dense with a nice banana flavor. Instead of vegie oil, I used 1/4 cup canola oil and 1/4 cup applesauce, otherwise followed the ingredients. I especially liked this toasted with a little smear of Smart Balance Light.

      We really enjoyed this bread. I was looking for a healthier bread to go with our chicken noodle soup tonight. I did the same changes as the previous reviewer with the applesauce and whole wheat flour. The wheat flour was great, but I think I would do 1/4 c. oil and 1/4 c. applesauce next time. I love the addition of the oats. It's a bread I felt good about serving my family. Thanks for posting!
