This is a fantastic way to eat a potato! Light, airy, fluffy ,with all the fixin's of a baked potato. We loved the onion and cheese flavor running throughout. I halved the recipe and baked in individual gratin dishes, which reduced my cook time a bit. I will definitely be making these again!
