Karottesalat (Carrot Salad)

Posting this at the request of my German DH. Excellent served with Gurkensalat (Cucumber Salad).

  1. Peel, then shred the carrots with a grater.
  2. Chop the fresh dill into tiny pieces.
  3. Mix all ingredients together and let marinate for 1/2 hour at room temperature to let the flavors blend.

This is a nice alternative to the mayonnaise-laden carrot salads I’m accustomed to finding. DH, who doesn’t like carrot salads, even said he would eat this one at a potluck. I let it sit about 36 hours before serving which allowed the flavors to blend more. Thanks for sharing! Reviewed for ZWT6.
