Barbecued Meat, Nairobi Market Style (Kenya) Prepare the following combination and keep in a jar for barbecues. I found this recipe on-line. This mixture is rubbed into the fatty parts of ribs, pork, or the skins of chicken with the fingers, and the meat is barbecued. Meats are never basted with sauces or oil, and yet they never seem to be dry. However, if the meats you are using appear to be dry, keep a light salad oil on tap to brush on during the cooking if necessary. This mixture can easily be cut in half.
- 118.29 ml coarse salt (kosher type)
- 29.58 ml coarse black pepper
- 14.79 ml crushed red pepper flakes
- 29.58 ml sugar
- 2.46 ml ground ginger
- 4.92 ml garlic powder
- 4.92 ml onion salt
- Thoroughly combine all ingredients.
- Rub onto whatever meats you would like to bbq.
This is a delicious rub. The flavors go together so well. I made it for chicken and it was wonderful. Made for ZWT7 for the Vivacious Violets.
This reminds me that I need to make more African friends. I'd be happy to make a fake trip and take anybody with me. I'll save you a seat, but for only 24 hours. (Didn't have red pepper flakes and subbed ground red pepper.) Made for ZWT7.
Great rub! We used this on some grilled chicken and it had great flavor. I was worried it would be dry with all the salt but it was juicy and flavorful! I love that this makes a jar full because I have more of this to use on future endeavors! Thanks for a great rub! *Made for ZWT Africa*
