My boyfriend's mom makes this and it is really good. Really an apple cake - very fresh tasting.
- 709.77 ml flour
- 473.18 ml sugar
- 295.73 ml vegetable oil
- 3 eggs
- 4.92 ml salt
- 7.39 ml baking soda
- 4.92 ml cinnamon
- 9.85 ml vanilla
- 473.18 ml apples, raw, pared and diced
- 236.59 ml nuts, your choice
- Mix ingredients well.
- Fold in 3 cups diced raw pared apples and nuts.
- Bake in greased 9x13-inch pan at 350* for 50 minutes.
- Servings are estimated.
I've been experimenting with apple cake/bread recipes, and I really liked this one. I liked that it made its own crumbly crust, and had a really nice texture!
I chose to make this for PAC 2007. I chose to make this in small cup cake tins - grab and eat. I used my small toaster oven , came out excellant. Will be making this again. Thanks.
Wow, this deserves more than 5 stars!! It is sooo yummy, moist and the perfect sweetness. And so easy to make! It tasted even better the 2nd day. I made a few changes to the recipe to make it a little healthier. I used 3/4 cup vegetable oil and 1/2 cup sweetened applesauce to have 1 1/4 cups total. Since the apple sauce was sweetened, I reduced the sugar to 1 1/2 cups. I used walnuts for the nuts and everything else I did as listed. It baked up quickly, it only took 30 minutes to be done. I love this recipe and it is now one of my new favorites! Thanks jesslems!
