"A very old Estonian dessert recipe that was made for special occasions in days past. This makes a cake-like barley bread. Posted for ZWT4."

• Serves: 8-10

ingredients

• 1 pint sour cream
• 1 egg
• 1⁄2 teaspoon salt
• 3 tablespoons sugar
• 1⁄4 cup butter, melted
• 1⁄2 cup whole wheat flour
• 1 cup barley flour
• 1⁄2 teaspoon baking soda
• 2⁄3 cup carrot (grated finely)
• 2 tablespoons butter, for sauteing

• For cranberry cream-sauce

• 1 cup plain yogurt
• 3 tablespoons sugar
• 1⁄3 cup cranberries
• 2⁄3 cup whipping cream

directions

1. Saute grated carrot in butter over medium high heat 2-3 minutes ; let cool.
2. Mix soda and flours.
3. Beat eggs, add sour cream, sugar, salt.
4. Add the flour mixture; mix well.
5. Add melted butter and carrots and mix very well.
6. Pour mixture into baking dish
7. Bake at 350F for 35-40 minutes.
8. Serve hot with cranberry cream sauce (see below).

9. Cranberry cream-sauce for serving:

10. Mix Sugar and yogurt, till Sugar is disolved.
11. Whip the cream till soft and mix in the yogurt.
12. Mash the cranberries and add to the mixture.
