Yet another variation on a basic, basil pesto. Olives add a unique flavour kick.
- 1⁄2 cup kalamata olive, minced
- 4 cloves garlic
- 2 cups fresh basil, packed
- 3 tablespoons extra virgin olive oil
- 2 tablespoons parmesan cheese, freshly grated
- Toss everything into the food processor, pulse until just combined, then process fully until a paste is achieved.
A nice simple pesto variation. I used a combination of lemon basil, sweet basil and Thai basil.
