      Cut potato in half lengthways.

      Put slice of onion between potato halves. Sprinkle with garlic salt and pepper. Add slice of bell pepper.

      Wrap in foil and bake for 1 hour.

      For a moister potato, add 1 tablespoon chicken broth.

      This was a pretty good spud...I enjoyed especially the flavor from the onion (and eating the onion after done baking LOL)! That said, I really wish I had added the optional chicken broth as I wanted more moisture. I used a medium potato and it was not quite done after 1 hour at 400. I will definitely try this technique again with the broth and perhaps a few more spices to compliment the rest of my meal. Thanks for posting! Made for 123 Hits tag.

      It's amazing just how much flavour this potato has without the addition of butter or sour cream. I've already made this twice and will be making it again. The first time I baked a large potato at 425F for 1 hour and the second time I baked 4 small potatoes for an hour at 350F. Both were done to perfection. Made for Newest Zaar Tag
