This was a pretty good spud...I enjoyed especially the flavor from the onion (and eating the onion after done baking LOL)! That said, I really wish I had added the optional chicken broth as I wanted more moisture. I used a medium potato and it was not quite done after 1 hour at 400. I will definitely try this technique again with the broth and perhaps a few more spices to compliment the rest of my meal. Thanks for posting! Made for 123 Hits tag.
