  1. I thought this was a lovely, refreshing salad that went well with my meal. I did alter the recipe slightly by adding some minced fresh chilies to it, as I have seen done in Indian restaurants before. It turned out wonderfully that way, with a nice bite that was STILL way cool cool with nice tomato flavor and the crunch of cucumbers just right! I had this with Lennie's Chicken Kebab's with Orange Marinade, and Charishma's Ultimate Lemony Potatoes. I MUST MUST have this again! :)

  2. Another delicious and simple dish. I served it as an accompaniment to Cuban Black Beans (#8969) and they work very well together.

  3. I found this to be a very refreshing salad, particularly on a warm day. It was, however, a little too tart for me, so I increased the powdered sugar to 1 tablespoon.

  4. Mini, we really enjoyed your salad tonight with Kevin Bradley's Quick Korma and Basmati rice. I often make a dish of tomato, cucumber and onion in yoghurt, but found this to be much more zingy and refreshing. We added about 1 tablespoon of chopped mint to your original recipe which added another flavour and colour.

  5. This is a great side dish to a curry. I left out the sugar and added mint. Very refreshing. Thank you Mini.

I love cooking and devising ways to smash set patterns of cooking. I do not like over use of spices in the cooking and am dead against using readymade or canned ingredients. Cooking is my favourite prescription for busting all the stress that I accumulate in the work place.
