ingredients
- 2 lbs shrimp, raw (21-25, peeled and deveined )
- 1⁄2 cup kosher salt
- 1⁄2 cup sugar
- 2 cups boiling water
- 4 cups ice
- 2 quarts ice water, for bath
- 3 quarts water
- 1 lemon, sliced thin
- 2 stalks celery, chopped
- 1 carrot, chopped 1/2 onion cut in half
- 1 teaspoon crushed red pepper
- 1⁄3 cup kosher salt
- 1 tablespoon seafood boil (Zatarains liquid concentrated)
- 1 teaspoon whole peppercorn
directions
- 1st thaw the shrimp in cold water.

Brine the shrimp:
- boil the water and sugar and salt.
- now add the ice and let in melt completely.
- brine should be cold.
- add shrimp for 20 minutes then rinse well under cold water.

Cook the shrimp:
- boil the last 7 ingredients for 10 minutes.
- now add the shrimp -- cook for 3- 5 minutes, DO NOT OVER COOK!
- when shrimp are bright pink they are done.
- quickly strain shrimp and add to ice bath for 10 minutes.
- serve with lemon wedges and my creole shrimp sauce #433042.
