Just Like Loaded Baked Potatoes Casserole

ingredients
- 2 1⁄2 cups cooked cauliflower (I use frozen, cooked until tender, in the microwave)
- 1 cup sour cream (low fat works here, too)
- 3⁄4 cup shredded cheddar cheese (full-fat works best)
- 3 green onions, finely chopped
- 3 -6 slices crumpled cooked bacon or 3 -6 slices turkey bacon
- salt and pepper
directions
- Pre-heat oven to 350.
- Chop cooked cauliflower into very small pieces.
- Mix sour cream, 1/2 of the green onions, 1/2 of the cheese, 1/2 of the bacon, and salt and pepper to taste in medium bowl.
- Stir in the cauliflower.
- Place in medium baking dish and sprinkle remaining cheese and bacon on top.
- Bake for 20 minutes.
- Sprinkle the remaining green onions on top just before serving.

This stuff is 100% amazing! Even my non low carb friends love it and my small children love it too. I use cream cheese in mine- a whole 8oz package and I use more cauliflower. Since I'm usually out of green onions, I find that the dried chives work very well! This is a super easy and tasty dish for anyone, not just low carbers!!

This is my new favorite recipe! I really love that I can have something close to mashed potatoes on my Atkins lifestyle! The bacon and cheese are amazing. I put cheddar cheese on the top at the end and put in in the broiler and it makes a nice, cheesy topping! Even my 15 year old son chose this over mashed potatoes at dinner!

2007 I thought that I would edit my home page...its been over two years, so I its time to update! I have lived in beautiful New Mexico for the last few years (Albuquerque), after 20 years of living on the West Coast (San Francisco and Seattle). I love many things about New Mexico - the perfect weather, in particular; the sunsets; the open land; and the great Southwest food - but also sometimes miss the energy of bigger cities. Rather than cooking a few favorites on a regular basis, I prefer to collect recipes (primarily from the Internet), and try new things often (in fact, my husband jokes that he will try a new dish that he loves and then never see it again :-)). I also love to read, write, travel, work on personal growth, and study/learn. I am a total water baby, who lives in the desert, so I love traveling to tropical locations, where I especially love to snorkle and boggie board! I am very happily married to my best friend, soulmate, partner, and greatest cheerleader and supporter, and we have three grown children, and four grandchildren (so far :-))I am a total foodie (I "live to eat" instead of "eat to live.") :-) I love everything about food...cooking; the delicious scents of a yummy dish, as it cooks; the beautiful presentation of wonderful food; dining out; dining in; the taste of great food; sitting around the table, with friends and family, eating, talking and laughing; nurturing those I love by cooking for them...all of the senusal pleasures that food brings!
