My family loves the macaroni and cheese at California Pizza Kitchen, so I tinkered around and came pretty close to it. Enjoy!
- 16 ounces rotini pasta
- 8 ounces Velveeta cheese
- 1 1⁄4 cups heavy cream
- 2 tablespoons unsalted butter
- Cook pasta in boiling water for 10 - 12 minutes until al dente.
- Meanwhile, cut the Velveeta into cubes and add it to the cream and butter in a large saucepan over low heat, stirring often.
- Drain pasta well and add to Velveeta mixture and gently mix to coat.
Absolutely amazing recipe! If you make it step by step, it turns out near identical to CPK (if not better). Recently, I've began adding 1 cup of cheddar and then baking it in a dish covered in more cheddar. Adds a little more sophistication and is SO good! Will continue to make this recipe at least once a week.
So good! It tastes very similar to the CPK macaroni and cheese and simple to make!
Both of my kids love the Mac n cheese at CPK. I found this recipe online and made it for 5 kids ranging from 2-8 Yrs old. for a sleepover that they had. They ate the entire pound of pasta. They couldn't get enough of it. My kids said it tastes just like CPK's. Fast, easy, and tasty.
