  • Combine the squash, onion, sugar, and salt with enough water to cover. Bring to a boil, reduce and simmer until tender, drain. Spoon squash mixture into a bowl and mash. Add butter and mix. Stir in the eggs and add the cheddar cheese, milk, bread crumbs and cayenne pepper and mix. Spoon into a buttered 8x8 baking dish. Sprinkle with Parmesan. Bake at 350 for 30 minutes or until brown and bubbly.

  1. Really enjoyed this dish..made it as a side dish with a roast. Seemed to me like it tasted like eggs with squash and cheese...leftovers I warmed up and ate for breakfast! Took longer than 35 min. for me. But will be sure to make it again!
     
  2. Delicious! It was cheesy and moist but not at all runny. I made this just as written. I sprinkled with parmesan about halfway through baking so it wouldn't get too brown. Thanx for posting!
