This simple and flavorful soup has been the lunch or dinner standby in our home forever. Comfort food that everyone will love.

Directions

  1. Place potatoes and onion in pan, barely cover with water and bring to a boil.
  2. Turn down to simmer.
  3. After 25 minutes, mash potatoes in the pan. (Do not turn the stove off and do not drain the water off.).
  4. Add salt, pepper, parsley and butter.
  5. After butter melts, add milk or cream to desired consistency.
  6. Cook a few more minutes to get soup back up to temperature.
  7. Garnish each serving with chopped green onions.

Yum. This was very good! I also shredded some cheese to go on top. I substituted a large shallot for the onion (due to onion allergies), and the family loved it. Thank you!

Delicately delicious! But I did learn that the size of the pan here is important as that determines what the water to potato ratio is. Next time I will use a 3 quart saucepan, and there will be a next time puppitypup. I added bits of ham to ours. Made for PRMR.
