      These pork chops were surprisingly good. While I reduced the number of chops to 2, I kept the remaining ingredient amounts the same. I did not have sliced pineapple so I used crushed pineapple instead and spread a layer of pineapple over each chop before adding the onion mixture. The chops were tender, juicy and surprisingly spicy...not just sweet. A keeper.

      This was very good!! My loin chop was very moist and tender. It is easy to make. I had this with my Garlic Butter Rice. The 2 went really good togher. I will be making this again. Thanks for a great recipe Derf.

      What a shame that this recipe was missed in RSC10 - It is a winner - The name says it - Juicy & tasty! I thought that the combination of capers and pineapple may be a bit strange but they compliment each other. The capers give a piquant touch to the pineapple. The chop looks attractive on the plate with the golden slice of pineapple sitting on it. I cut the recipe back to one chop with no problem. I love onions so left them at the full amount and caramelized them along side the chop. Thanks who ever you are for a delicious dinner The photos do not do this recipe justice
