I would recommend adding 2-3 more teaspoons of chili powder to the liquid mixture. Also, the mixture did not leech very well beyond the skin, but for that, I can provide another solution or reccomendation. Oh, the drippings mixture makes an excellant dipping sauce for teared chicken pieces.
We really tried to like these, but there was something missing. The hens DID come out juicy, though, but way too bland.
Excellent recipe. This was my first time making cornish game hens and they came out perfectly. I added garlic and basil to basting sauce and used remaining to dip in...so yummy! I also cooked on orange slices as suggested. Will definetly make again!!!
Sorry, but I didn't care for the flavor of the sauce. I could taste the chili powder and it just didn't taste right. I was surprised that one of my kids ate it - other didn't, but she's very picky. Chicken cooked up nice and was very juicy, but the taste wasn't for me....

I thought this was really good. It wasn't as difficult as I thought to cut then hens in half. I didn't remove the back bone....just cooked it as is and there was no problem. I really hate the taste of chili, so I didn't think I would like this, with the chili powder, but I made it exactly as is and it was great. There was no chili taste at all. The only thing I would do differently next time is to make double the sauce or (like someone else said), inject the meat with the sauce. It's so good, but I don't eat the skin and that's where all the flavor was...on the outside of the skin. Maybe if the skin got crispy, I would eat it, but it wasn't. Extra sauce to spread inside the chicken would do the trick though!
We didn't care for the seasoning.
