  • Brown linguica and chorizo in large skillet.
  • Meanwhile puree the tomatoes, jalapenos, onions and garlic in batches, using a blender. Add to browned sausage. Simmer 2-3 hours.
  • Heat oil in pan and fry tortilla triangles until golden brown, drain on paper towel or paper bag.
  • Fry eggs and place on top of chips. Top with sauce and cheese.
  • Note- The sauce freezes well.
