First I cut the recipe down to one serving. I used Tilllamook butter, Tillamook extra sharp cheddar, homemade copycat Cavender's Greek seasoning and fresh cilantro. This was delicious scooped up with a corn tortilla! Next time I'll try it with cottage cheese. Made for Recipe Swap #84

AUSSIE/NZ May 2008 Tracie- Let Joshua know I LOVE his eggs. I have made eggs and cheese many, many times but I have never used Velveeta. Thought I would use his recipe as a tester. I liked these very much. The recipe is also very versatile because of it's simplicity. I reduced the amount by 1/2 as it only DH and I. I will use this recipe often for summer camping trips. I have made this 3 times and varied some ingredients 2 of the times. I added ground sausage, onions, and green peppers one time GREAT. The next, I used leftover chuck steak,(Beef Chuck Steak W/Onions & Peppers ) onions and salsa the 3rd time. Came out great!
