Josephine's Apple and Cheese Bars

"I run a cooking and recipes meetup group and we recently had an Iron Chef Competition. This recipe won 1st Place, so I wanted to share it with all of you, because they are REALLY YUMMY! Thanks Josephine!"

  • Preheat oven to 350.
  • Line a 9" square metal cake pan with aluminum foil, leaving 1" overhang for handles. Set aside.
  • In a bowl whisk together oats, flour, brown sugar, and salt.
  • Stir in melted butter and oil, until mixture clumps and is crumbly.
  • Add another tablespoon of oil or water, if necessary, to ensure no dry spots.
  • Add cheese, tossing to mix.
  • Save 1 1/2 cups of mixture for later, and press the rest evenly into prepared pan.
  • Bake in the center of a 350 oven, until edges are golden, about 15 minutes. Let cool.
  • Peel, core, and slice apples 1/2" thick.
  • In a saucepan, bring apples, sugar, lemon juice, and cinnamon to boil, adding up to 1/4 cup water, if apples stick to pan.
  • If apples becomes too runny, sprinkle 1 teaspoon cornstarch over apples, then mix in, and let thicken.
  • Reduce heat and simmer, stirring occasionally, until tender-crisp, about 5 minutes.
  • Spread apple mixture over base.
  • Sprinkle with remaining oat mixture.
  • Bake until golden, about 30 minutes.
  • Let cool in pan on rack.
  • Cut into 3" squares.

  3. This is a new favorite with us and my DH couldn't believe it had cheese in it! These are so good you won't be able to leave them alone! Just like apple pie only better!
     
  4. Totally to die for apple bars. I made them 3 times and my DH wants them daily!
     
  5. I used macintosh apples fresh from the farm to make these. The apples were tart and delicious. The results were not overly sweet but were perfect with a big scoop of vanilla ice cream on the side. Totally delicious. We loved them and will have them often as I got thumbs up from my whole family!!!

It can be down home or restaurant quality, as long as it tastes great and I didn't have to make any changes along the way! Also recipe has to have clear directions. One I would definately make again and again. <br /> <br />4 Stars **** Great recipe that I loved, but one that I may have had to tweak just a bit. Directions may have not been crystal clear. One I would make again and again with my changes. <br /> <br />3 Stars *** I liked the recipe, but had to add ingredients, or add more of a called for ingredient to have the recipe come out the way I like it. I would probably make again sometime. <br /> <br />2 Stars ** This recipe was ok, but I probably wouldn't make it again due to lack of taste, undesireable texture, or unclear directions etc. <br /> <br />1 Star * This recipe was one I didn't like at all.
