      My wife really hates it when I bring home a frozen durian so I have to portion it out and freeze it ASAP. As as consequence I have almost an entire durian in our freezer and this recipe looked like a good way to use some of it up. Was it ever.

      Because my durian had been frozen it was difficult to separate the stringy sections from the fruit, so I just put it all in a food processor and blended it until it was the consistency of baby food.

      I used regular muffin pans and got nearly two dozen of these, about the size of standard cupcakes. What's surprising about them is that they really don't give off any of the characteristic durian odor, but retain the delicious, complex durian flavor.

      Mine were very sticky on top even though they were done all the way through, so I left them on a rack for nearly a day to dry the tops, then froze them. Now whenever I'm in the mood for some durian I can enjoy the flavor without the wife complaining about the smell.

      Really a great way to use durian. When these are gone I'm going to make a second batch.

      Very great and easy to follow recipe. I used brown sugar instead of palm sugar, which worked marvelous and gave it a nice, eich color. However one criticism is that when I baked it in the oven I found 325 to be rather low and ended up adjusting to 375 later on, which I felt was the correct temperature to cook it, because it wouldn't firm up before. I personally love durian, and found these muffins to be exceptional, everyone that tried was surprised to hear it was durian, as many of my friends do not like the taste. Just beware though, baking these will make your kitchen smell, but it is well worth it.

      It is a great recipe, fragrant and tastes fantastic. I doubled the recipe to make 18 muffins & adopt the mixing of dry-into-wet ingredients method. Used 500 gr durian flesh and reserved some for topping. I also added a 1/4 cup oilve oil. Baked 20 minutes at 180 degree C fan forced.

      This was really good. I doubled the recipe and got 21 normal-size cupcakes out of it. If I'd filled them a bit less full, it would have made 2 dozen. I cooked a little longer until the center was set, but think they could have stood to be underdone.
