Like the California gold rush, cowboys ride like the wind to get to JJ's wild & crazy explosions of flavor in these corncakes. So git ya a big spoon and come dig in! You can use full flavored ingredients, we just tried to lower the calories/fat with some ingredients.
BATTER: Mix all batter ingredients well (you should have about 2 cups).

Heat griddle to medium and grease lightly (or use spray butter). Pour 1/4 cup of batter onto hot griddle to total 8 pancakes (do in batches if necessary).

Top each equally with bacon, jalapenos, and cheddar. When bubbles begin to appear on the edges of the cakes (about 1-2 minutes and making sure the bottom is thoroughly cooked), Carefully flip them over and cook the other side (about 1-2 minutes). Do not pat down the pancakes!

Flip cakes topping side up onto serving plates. Top each with the butter, picante, & sour cream. Drizzle lightly with maple syrup, and serve.
I cut the recipe in half & served these for breakfast for the 2 of us! Also made the recipe pretty much as given & was pleasantly surprised that we both enjoyed these nicely unusual 'cakes very much! Great and fun recipe! I used just a tiny bit of syrup and it was good with the salsa and sour cream topping for the corncakes. I think these would also be great with a fried egg on top. You could serve these for breakfast but for us they made a nice hearty dinner. Thanks for sharing the recipe!

Wow, what a wonderful combination of taste and texture -- it's a breakfast experience to remember! I would tend to omit the maple syrup, but it adds the SWEET counterpoint, and how else would the cowboy get his lasso? I used condiment dishes to keep the crumbles from each piece of bacon separate. I also worked out that each cake gets 1 tablespoon of each topping (except 1 teaspoon of chopped jalapeno). Being a bit OCD and low in manual dexterity, I was challenged to add the filling ingredients before I needed to flip the cakes. This was not very spicy, so don't be afraid to try these.
