This was very enjoyable and nice that it came together quickly. I liked the zing from the extra jalapeno, which added to the already-spicy sauce I used made us reach for the beers! It was a little too creamy for me - I might reduce the cream cheese/sour cream just a bit next time, but overall very satisfying.
Great tasting enchiladas. My favorite herb cilantro added just the right flavor for this dish. I think 30 minutes may be enough cooking time if your oven temp is accurate.
DS made these, one pan with jalapenos and one pan without for the sensitive-tongued one in our family. The family chowed down on the zippy ones, which are absolutely delicious, creamy in the middle, fork-soft and cheesy. Made for PRMR and thoroughly enjoyed.
These were really good! Rich, creamy, spicy- just what an enchilada should be. These were very easy to make, I put the pan together in the morning, then refrigerated until I was ready for dinner. There was a bit more sauce than I needed, but it tasted oh so good. I'll definitely be enjoying these again.
