This is quick & simple, but delicious. You can do it outside on the grill or inside under a broiler, it's that versatile.
- Pound chicken breasts on each side and place in a ziplock baggie.
- Add lemonade and lemon pepper.
- Marinate overnight.
- Drain chicken and grill.
- Season with salt& more lemon pepper if desired.
We had some friends over for a BBQ last night, and no one, I mean NO ONE could guess what I did to the chicken breasts! When I finally let the cat out of the bag, they were in shock. They all asked for the recipe, and since it was soooooo simple, I was able to just recite it right there at dinner, and they were able to remember it all without writing it down. I only managed to marinate the chicken for about 4 hours, but it was just fine, I can imagine that 24 hours would be amazing. I did use the lemon pepper but also added some paprika, which melded with the yellow of the lemonade and gave the chicken a lovely orange color. The sugar in the lemonade does make the chicken more likely to burn, so keep it over a low heat and let it cook slowly, it's worth the wait! Another winner from MG!
This recipe is keeper for my family. We grilled with indrect heat. The chicken was tender and had a great flavor.
Pretty good. The sweet and sour flavor is quite nice. Served with some crusty bread and a leafy salad, with some stuffed bell peppers on the side.
