This is about the simplest casserole I have ever made, I add a million things to it including cheese depending on my mood but here is the general base recipe.
- 1 lb lean ground beef
- 1 small chopped onion
- 2 tablespoons minced green peppers
- 1 (14 ounce) can tomatoes, chopped
- 1 1⁄2 cups noodles, cooked
- Brown the ground beef and chop up.
- Add in the other ingredients and simmer for 7 or 8 minutes.
Move over Hamburger Helper! Jodie's got a better alternative that's just as simple. I loved this because it reminds me of eating goulash in college. Somehow I wound up with twice as many noodles so I added another can of tomatoes, a bunch of bell peppers, and a lot of cheddar cheese. I wanted a little more bite so I threw in some red pepper, then added garlic, salt, and pepper. I will remember this dish when I feel like going out to eat because cooking seems too time-consuming and I'd have to go to the store to make anything. You probably have everything you need on hand, or you could make it up based on what's in the kitchen cupboard. If I had mushrooms, I definitely would have added them. Very hearty and satisfying. Made for Fall 2009 Pick a Chef. Thank you Celestial Star!
