    Maryland Jim's Note:

    This is how my family has come to like "meaty" ribs. The meat just falls off the bones and is finger licking good. It's also easy to prepare.

      Fill a 12 quart pot 2/3 full with water. Add all ingredients except bar-b-que sauce.

      Bring to a boil over high heat. As soon as water begins to boil, lower heat to simmer and simmer for 45-60 minutes, stirring occasionally.

      Drain off liquid. Place ribs in a baking pan. Pour bar-b-que sauce over ribs. Cover with foil and bake in a 350 degree oven for about 30-45 minutes.

      Option: Instead of baking in oven, put ribs on the grill and baste with sauce.

      These ribs were so flavorful! I used 3 pounds ribs, one onion, 8 cloves garlic, about 1/4 cup pepper and less than 1/4 cup salt (it just seemed like so much!). I added some hot sauce and some bay leaves, but left out the cajun because I didn't have any. Boiling the ribs with all this added so much flavor into the meat! I did wish they turned out a little less dry/more tender, maybe I should have boiled longer or cooked in the oven less. This was only my first time making ribs. Thanks for a great recipe!** Updated to state that I made these again tonight and they were the best ribs I've ever had! The key was to boil until tender, for my ribs it took closer to 1.5 hours. I also finished on the grill, which was so much better than the oven! Thank you again for such a great recipe**

      I used a pressure cooker for 10 or 15 minutes instead of simmering. Then I put them in a stove top smoker dipped the BBQ sauce on both sides. Let them smoke for almost an hour. Amazingly good and with so little fat.

      I too like to prepare my ribs by cooking them in water first. But just an added idea, I put an orange cut into two with bay leaves, onion, and garlic. The orange takes the fat from the ribs and adds a wonderful flavor. I then put bbq sauce on them and cook them on the grill or oven. Yummy!
