As an Alabamian who also LOVES Jim N' Nick's, this is not even close to their recipe. My husband and I like their food so much we actually had them cater our wedding; believe me, we know their sauces. Mayo-to-liquids wise, the consistency of this recipe is fine. But the spices? Not even close. 3 tablespoons of pepper AND 3 tablespoons of cayenne?! Alabama white BBQ sauce is NOT hot, so I don't know what is meant by "hot, how we like it in Bama." Hopefully this is an unfortunate typo and the author meant teaspoon? I made this recipe exactly as listed above but with one Tablespoon of cayenne and even then I was wary. Turned out it was hot as blazes. Personally I like spicy, so I liked the sauce. But representing this recipe as a "Jim n Nick's" copy cat is sacrilege. If you want something closer, add just a dash of cayenne and one Tablespoon of pepper at the very most.
