Loved this recipe! Followed exactly. Very moist. Served with taco soup at a party. What a hit! Next time I will mix most of the cheese into the mix and lightly sprinkle cheese on top. Oh yes, I used recipe Jiffy Corn Muffin Mix Copycat Jiffy Corn Muffin Mix Copycat for the "Jiffy Package".

I thought I had commented on this recipe the first time I made it, but apparently I did not. It is the most requested dish my family asks me for whenever we have any kind of family get together. I stir the cheese into the mixture and top with crushed Ritz crackers that have been mixed with melted butter. We love the crunchiness it adds to the dish. I also add a couple of tablespoons of sugar because the cheese and sour cream diminishes the sweet taste that we prefer in corn bread. Love, love, love this dish!

Yummy! Used Jiffy Corn Muffin Mix Copycat with good results. Made in a 13x9 pan, but an 11x7 would be a better choice. Just realized I stirred in the cheese instead of adding on top. Whoops. In any event, we enjoyed the dish and it was very quick to put together. Thanks for sharing the recipe!

I prepared the recipe but added 1/2 cup heavy cream and a 1/2 cup of chopped canned green chilies. It was AMAZING. I think next time I'm going to add diced ham or bacon.

Sign in or create an accountThis is absolutely awesome! I love Jiffy Cornbread anyway. However, I've never been able to get my husband to eat it. He had 3 helpings of this. I made two dishes of it, went to work, came back home and one dish was completely gone and only 1/4 of the other dish was left!

Super good. My DH had four helpings. He didn't eat much meat and I asked him if he didn't like it and he said yes, but he liked the corn so much better. Thanks for a super recipe.

I have been making this for about 5 years now and love it! My family requests this at every holiday meal. I found my recipe in a Costco cookbook and was going to post it here until I found the exact recipe.

Loved this! The only thing I did was to add pepper and 2 T of honey to the batter. I used an extra sharp white and yellow cheddar mixed into the batter. This would definitely be great with a breakfast spread too. I salted my serving and found that the added salt was great with the sweetness--sort of like salt on watermelon:lol: A keeper as posted:) Thanks!

I thought of giving this recipe a 4 but I'm giving it a 5 because of the multiple requests for the recipe I received after serving it at Christmas. It wasn't my favorite but everyone else seemed to love it. I agree with other reviews, you can get away with half the butter. I doubled the recipe and there simply was not a need for all that butter. EXTREMELY easy to make.

Excellent. I've never made the Jiffy version with sour cream before. It is really good even after cutting the butter in half and leaving out the cheese (allergies).

Wonderful recipe!!! I had to improvise a bit as I didn't have anything but creamed corn. I subbed 2 cups of frozen corn, and only used 3/4 a box of the jiffy cornbread. It turned out great! Thank you for the great recipe!

This is the best recipe for scalloped corn! I omit the cheese and find it sweet, rich and savory. This is my whole family's NEW scalloped corn recipe.

Thanks so much for posting this recipe. I had it about a year ago and lost the recipe. Just like the other reviewer, i remembered everything but the sour cream. I always double the recipe and serve in my 2 quart casserole dish. I can't believe something so delicious, is so simple to prepare! Thanks again for posting this wonderful recipe! Yummy 5 stars for sure!

so easy and suprisingly flavorful! i added a little S & P and i was probably a little heavy handed on the cheese...it was delish and i'm making it again this weekend. thanks so much for posting!
