This was a recipe request. My mother used to make this when I was a kid. It's a simple, quick cake to throw together, and as LDJ pointed out, it's good with chocolate frosting or fruit.
- 1 1⁄2 cups jiffy mix baking mix
- 3⁄4 cup sugar
- 2⁄3 cup milk
- 1 egg
- 2 tablespoons soft shortening
- 1 teaspoon vanilla
- Heat oven to 350°. Blend all ingredients, beat for 2 minutes.
- Pour into lightly greased 8" pan.
- Bake 25- 30 minutes.
This is a really good, old-fashioned cake...simple and delicious! It was a standard in my home growing up and very good frosted with a chocolate fudge or cherry flavored icing. If you are looking for a treat with a "take me back to the good ol' days" flavor, this one is it.
I had forgotten this cake until someone requested it. Then a slew of memories came back. This cake adorned our table many times under various guises. From chocolate frosted and fruits, hot fudge sauce, carmel sauce or icecream. Sometimes she would just slice it and put a dab of jam on and a dusting with powdered sugar.
This was truly delicious and super easy. We had it for breakfast with sweetened strawberries and light whipped cream and it was the perfect base for strawberry shortcake but it was also very good plain. I used Bisquick baking mix and subbed butter for the shortening. BTW, there is nothing in the instructions about pan size or temperature. I used an 8 inch square pan in a 350* oven. Thanks for posting...I am thinking of making a few of these and freezing them!
