Jicama Coleslaw

Ingredients:

Servings: 4

Slaw

• 3 cups green cabbage, shredded
• 1 1/2 cups jicama, julienned
• 1 1/2 oranges, peeled and segamented
• 1/2 cup red pepper, julienned
• 1/2 cup green pepper, julienned
• 1/4 red onion, sliced in thin rings
• 1/4 cup cilantro

Dressing

• 1/8 cup salad oil
• 1 tablespoon sugar
• 2 tablespoons rice vinegar
• 1/2 tablespoon sesame oil
• 1 teaspoon soy sauce
• 1/4 teaspoon Dijon mustard
• 1/4 cup peanuts, as garnish

Directions:

1. mix ingredients for slaw then toss in dressing. Garnish with peanuts.

Made this as written with one exception ~ Instead of a red onion, I used a sweeter Vadalia, & was very happy with that! Just love the jicama in this kind of dish! [Made & reviewed in Healthy Choices ABC tag]
