- 2 large onions
- 2 stalks scallions
- 2 sprigs thyme
- 3 garlic cloves
- 1⁄4 cup vegetable oil
- 1⁄4 cup soy sauce
- 1⁄2 cup beer
- 1⁄4 cup vinegar
- 6 whole scotch bonnet peppers
- salt (optional)
- 4 pimento seeds
- 1 small piece ginger
- add following ingredients for jerk sauce
- 1⁄2 cup tomato paste
- 1 cup pineapple juice
directions
- Put all first 12 ingredients together in a blender.
- Blend until all ingredients are smooth.
- Leave marinade on your choice of meat over night.
- Bake or Grill your meat.
- To make Jerk Sauce - Mix all the Jerk Marinade ingredients together with tomato paste & Pineapple Juice cooled.
- Blend until all ingredients are smooth.
- Put finished product into a pan and simmer for 10 - 15 minute.
