Ingredients: 2 large onions; 2 stalks scallions; 2 sprigs thyme; 3 garlic cloves; 1/4 cup vegetable oil; 1/4 cup soy sauce; 1/2 cup beer; 1/4 cup vinegar; 6 whole scotch bonnet peppers; salt (optional); 4 pimento seeds; 1 small piece ginger; add following ingredients for jerk sauce; 1/2 cup tomato paste; 1 cup pineapple juice

ingredients

2 large onions
2 stalks scallions
2 sprigs thyme
3 garlic cloves
¹⁄₄ cup vegetable oil
¹⁄₄ cup soy sauce
¹⁄₂ cup beer
¹⁄₄ cup vinegar
6 whole scotch bonnet peppers
salt (optional)
4 pimento seeds
1 small piece ginger
add following ingredients for jerk sauce
¹⁄₂ cup tomato paste
1 cup pineapple juice

directions

Put all first 12 ingredients together in a blender.
Blend until all ingredients are smooth.
Leave marinade on your choice of meat over night.
Bake or Grill your meat.
To make Jerk Sauce - Mix all the Jerk Marinade ingredients together with tomato paste & Pineapple Juice cooled.
Blend until all ingredients are smooth.
Put finished product into a pan and simmer for 10 - 15 minute.
