My very picky dh loved, these dynamite drumsticks, they were juicy, tender, and full of flavor. The dark skin looked terrible but tasted incredible, all the lovely spices really popped. This dish was certainly worth the extra time and effort. I used a really thick greek yogurt so I didn't drain the yogurt; other than that I followed your recipe methods and ingredients to the T. A memorable meal served with mashed potatoes and gingered honey carrots. Thanks for sharing this lovely recipe, which we will enjoy again. Great use of contest ingredients, good luck in the contest. Made this as written and DH and I loved the dish! I haven't brined anything much but this really does add to the moistness! A little kick with the spice but we love it and defiantely will make this again. Thanks for posting your recipe!

This was spicy and hot! But we did find it on the salty side...and I used the lesser amount of salt for the brine...You can really taste the lime and ginger...and you get a touch of allspice at the end...my legs were huge so they took about 40 minutes to cook...The seasoning amount was perfect...made for RSC #18 contest...

I made this exactly as posted, and loved that the spice mixture was just enough for the chicken I was making. The chicken turned out very moist and flavorful. Next time I think I'll try to come up with a yogurt dipping sauce to use after the chicken is cooked. Loved brining the drumsticks....made them very moist. Thanks for sharing your recipe!
