      Made this for dinner tonight using a homemade jerk seasoning from my pantry (I live in a rural area and it is hard to come by in my neck of the woods). I thought the amount of seasoning called for would be too much, but it wasn't. The chicken came out so flavorful. In order to cook my chicken, I used a roasting cone, so that the skin got extra crispy. Will definitely make this again. Made and reviewed for Spring PAC 2012.

      Although the flavor of this chicken was terrific...the oven time was definitely wrong for normal roasting. Probably since the other reviewer used a roasting cone hers got the heat better, The recipe says total time is 55 min...if you subtract the preparation time that does not leave nearly enough time for the chicken to get done near the joints. After leaving mine cook an extra 15 minutes it was still bloody so we had to cut off parts and quick cook in the microwave. A time or temperature adjustment would help this recipe to become a 5 star instead. Made for PAC Spring 2012.
