Made this for dinner tonight using a homemade jerk seasoning from my pantry (I live in a rural area and it is hard to come by in my neck of the woods). I thought the amount of seasoning called for would be too much, but it wasn't. The chicken came out so flavorful. In order to cook my chicken, I used a roasting cone, so that the skin got extra crispy. Will definitely make this again. Made and reviewed for Spring PAC 2012.
